Ingredients
- 1 pound ground chicken
- 1 tablespoon extra virgin olive oil
- 1 tablespoon minced ginger
- 1 tablespoon minced garclic
- 2 small english cucumbers peeled and cubed
- 1/2 cup green onions
- 1-2 tablespoons gluten free tamari
- 2 teaspoons chili garlic sauce
- 2 teaspoons sesame oil
- 1 tablespoon rice vinegar
- 1 tablespoon honey
- 1/2 cup chopped cilantro
- 1/2 cup chopped mint
- 1 head iceberg lettuce, separated into lettuce cups
- 1 tablespoon roasted sesame seeds (optional)
- 1 tablespoon Sriracha (optional)
Instructions
- Heat pan over medium heat and add oil. Add ground chicken and cook until cooked through (10 minutes or so), stirring frequently to break up the meat.
- To the chicken add minced ginger and garlic. Cook until fragrant, 1-2 minutes.
- Add cubed cucumbers, green onions, tamari, chili garlic sauce, sesame oil, rice vinegar and honey.
- Cook for a few minutes.
- Add cilantro and mint. Mix.
- Serve in iceberg lettuce cups, topped with sesame seeds and Sriracha.
