This next recipe is for everyone this valentines day; it's important to make something to treat yourself every now and again, and you can share them with your friends too, but if you are in a relationship, these truffles also make a great thoughtful and delicious handmade gift that will definitely be appreciated by your loved one!
These truffles are made from the simplest two ingredients, to create such a rich flavour and delightful texture its hard to believe they aren't made from heavy cream, butter and chocolate, but instead a combination of dates and cocoa powder. I then divided the mixture into 3 to create 3 different flavours of truffles, that taste and look absolutely stunning. The first truffle has been mixed with dried strawberries, coated in chocolate and garnished with strawberry pieces.

Ingredients
- 1 cup soft dates (~225g)
- 6 tbsp cocoa powder
- 1.5 tbsp freeze dried strawberry pieces
- 2 tbsp freeze dried raspberry pieces
- 2 tbsp chopped nuts
- 40g 75% dark chocolate
Method
1. Place the dates and cocoa powder in the food processor and blend until a dough is formed.
2. Divide the mixture into 3 and place one ball in each bowl. In the first bowl add a tbsp of chopped nuts, in the second add a tbsp of dried strawberries and in the third a tbsp of dried raspberries. Mix the ingredients into each of the balls of truffle. Divide each of the balls into 3 equal sized truffles and roll into a ball.
3. Put a piece of baking paper on the work surface and put a tbsp of mixed nuts out. Roll the nut truffles in the nuts, you may need to press down slightly to get them to stick.
4. Next, get a clean piece of baking paper and pour the raspberry pieces into the sieve and shake allowing any raspberry powder to settle on the baking paper, then roll the raspberry truffles in the powder. If there is not enough then crush some of the raspberry pieces with a pestle and mortar.
5. For the strawberry truffles, place another piece of baking paper onto a small plate. Then break the chocolate into a small, microwave safe bowl and microwave on a medium heat until melted, stir every 20 seconds to ensure the chocolate does not burn. Then place a strawberry truffle into the chocolate bowl and coat with chocolate using a fork, remove from the chocolate, place on the plate and sprinkle with a few strawberry pieces, repeat with the other two truffles and place in the fridge to set.
6. Place all the truffles in mini cupcake cases, place in an airtight container and enjoy this Valentine's day.
